Ingredients
4 boneless, skinless chicken breasts (about 6 oz each)
1 tbsp olive oil (plus extra for searing)
Salt, garlic powder, onion powder, paprika, and black pepper (for seasoning chicken)
1 onion, finely diced
8 oz sliced mushrooms (baby Bella or white)
2 cloves garlic, minced
1 tsp Italian seasoning
¼ tsp dried thyme
4 oz cream cheese, softened
½ cup shredded provolone cheese or mozzarella slices
1 tbsp fresh chives, chopped
Instructions
- Preheat oven to 375°F (190°C).
- Heat 1 tbsp olive oil in a skillet over medium heat. Sauté onion until softened, about 3–4 minutes.
- Add garlic, Italian seasoning, thyme, salt, and pepper. Stir in mushrooms and cook until liquid evaporates, about 5–7 minutes.
- Let mixture cool slightly, then stir in cream cheese, provolone, and chives.
- Slice a pocket into each chicken breast. Season inside and out with salt, pepper, garlic powder, onion powder, and paprika.
- Stuff each pocket with mushroom mixture and secure with toothpicks if needed.
- Heat additional olive oil in the skillet. Sear chicken 3–4 minutes per side until golden (not cooked through).
- Transfer skillet to oven and bake 20–25 minutes, until internal temperature reaches 165°F (74°C).
- Let rest 5 minutes before serving.
