Ingredients
- Cake Base:
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 cup unsweetened applesauce
- 1/2 cup plain yogurt
- 1 teaspoon vanilla extract
- 2 large eggs
- Cherry Almond Cream Layer:
- 1 1/2 cups cherries, pitted
- 1 cup heavy cream
- 1 tablespoon honey or maple syrup (optional)
- 1/2 teaspoon almond extract
- 1/4 cup sliced almonds, toasted
Instructions
- Preheat oven to 175°C (350°F) and prepare an 8×8-inch baking pan.
- Whisk flour, baking powder, and salt in a bowl.
- In another bowl, mix applesauce, yogurt, vanilla, and eggs until smooth.
- Combine wet and dry ingredients until smooth.
- Pour batter into pan and bake for 25–30 minutes until done. Cool completely.
- Whip heavy cream with almond extract until soft peaks form.
- Gently fold in cherries.
- Spread cherry cream over cooled cake.
- Sprinkle toasted almonds on top.
- Chill for at least 1 hour before serving.
