Ingredients

  • Cake Base:
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup unsweetened applesauce
  • 1/2 cup plain yogurt
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • Cherry Almond Cream Layer:
  • 1 1/2 cups cherries, pitted
  • 1 cup heavy cream
  • 1 tablespoon honey or maple syrup (optional)
  • 1/2 teaspoon almond extract
  • 1/4 cup sliced almonds, toasted

Instructions

  1. Preheat oven to 175°C (350°F) and prepare an 8×8-inch baking pan.
  2. Whisk flour, baking powder, and salt in a bowl.
  3. In another bowl, mix applesauce, yogurt, vanilla, and eggs until smooth.
  4. Combine wet and dry ingredients until smooth.
  5. Pour batter into pan and bake for 25–30 minutes until done. Cool completely.
  6. Whip heavy cream with almond extract until soft peaks form.
  7. Gently fold in cherries.
  8. Spread cherry cream over cooled cake.
  9. Sprinkle toasted almonds on top.
  10. Chill for at least 1 hour before serving.
