Description

These No-Bake Cookie Dough Bites are a quick and indulgent treat with a soft, chocolate chip-studded cookie dough center coated in smooth chocolate. Perfect for snacking or sharing, with no oven required.


Ingredients

  • For the cookie dough:
  • 1 stick unsalted butter, softened
  • ½ cup light brown sugar
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour, heat-treated
  • ¼ teaspoon salt
  • ½ cup mini chocolate chips
  • For the chocolate coating:
  • 1 cup semisweet or milk chocolate
  • 1 tablespoon coconut oil or vegetable oil (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Spread flour on a baking sheet and bake for 5 minutes to heat-treat it. Let cool completely.
  2. In a mixing bowl, cream together softened butter and brown sugar until light and fluffy.
  3. Mix in milk and vanilla extract until smooth.
  4. Fold in cooled, heat-treated flour and salt until a soft dough forms.
  5. Gently stir in mini chocolate chips.
  6. Roll dough into 1-inch balls and place on a parchment-lined tray. Chill for 20 minutes.
  7. Melt chocolate and oil together until smooth.
  8. Dip each chilled dough ball into melted chocolate. Return to tray and chill again until set.

  • To make this recipe vegan, use plant-based butter, dairy-free chocolate, and non-dairy milk.
