Ingredients
- For the filling:
- 2 boxes (3.4 oz each) instant French vanilla pudding
- 3 1/2 cups whole milk
- 1 1/2 cups heavy whipping cream
- 3 tablespoons powdered sugar
- 1 teaspoon vanilla extract
- For the layers:
- 14 oz graham crackers
- For the ganache:
- 8 oz semi-sweet or bittersweet chocolate, finely chopped
- 1 cup heavy cream
Instructions
- In a large bowl, whisk together pudding mix and milk until smooth. Let sit for 5 minutes to thicken.
- In another bowl, whip heavy cream with powdered sugar and vanilla until soft peaks form.
- Gently fold the whipped cream into the pudding until light and airy.
- In a 9×13-inch dish, layer graham crackers on the bottom.
- Spread half of the cream mixture over the crackers.
- Add another layer of graham crackers, then spread the remaining cream mixture.
- Top with a final layer of graham crackers.
- Heat heavy cream until just simmering, then pour over chopped chocolate. Let sit 2–3 minutes.
- Stir until smooth to form ganache, then let cool slightly.
- Pour ganache over the top layer and spread evenly.
- Refrigerate for at least 4 hours or overnight before serving.
