Description

These No-Bake Peanut Butter Oatmeal Brownie Cups are a quick, wholesome treat made with rolled oats, cocoa, and peanut butter, topped with a dark chocolate drizzle. Perfect for a healthier dessert or snack without turning on the oven.

Ingredients

  • 1 cup rolled oats
  • ½ cup peanut butter
  • ¼ cup honey or maple syrup
  • ¼ cup cocoa powder
  • ½ teaspoon vanilla extract
  • ¼ cup dark chocolate chips (melted for drizzle)

Instructions

  1. In a medium bowl, mix rolled oats, peanut butter, honey or maple syrup, cocoa powder, and vanilla extract until a thick dough forms.
  2. Press the mixture into a muffin tin lined with paper liners or lightly greased, forming cup shapes by pressing up the sides.
  3. Refrigerate the tin for at least 30 minutes to allow the cups to firm up.
  4. Meanwhile, melt the dark chocolate chips in the microwave in short intervals, stirring until smooth.
  5. Remove the chilled cups from the tin and drizzle melted chocolate over each one.
  6. Let the drizzle set for a few minutes before serving.

Notes

  • Use paper liners or grease the muffin tin to prevent sticking.
  • Use maple syrup for a vegan version.
  • Store in the fridge for up to 1 week or freeze for up to 2 months.
  • Add shredded coconut, chopped nuts, or a spoonful of nut butter or jam for variation.
  • No reheating needed—serve straight from the fridge.
