Description
A classic old fashioned chocolate fudge made with simple ingredients and traditional cooking for a rich, creamy, melt-in-your-mouth texture.
Ingredients
- 2 tablespoons unsalted butter, plus extra for greasing the pan
- 2 cups granulated sugar
- 3/4 cup milk
- 2 ounces unsweetened chocolate, finely chopped
- 1/2 teaspoon kosher salt
- 1 teaspoon vanilla extract
Instructions
- Grease an 8-inch square pan with butter and set aside.
- In a heavy-bottomed saucepan, combine sugar, milk, butter, chopped chocolate, and salt.
- Cook over medium heat, stirring constantly, until the butter and chocolate are melted and the mixture is smooth.
- Bring to a full boil, then stop stirring and cook for 5–7 minutes until the mixture reaches the soft-ball stage.
- Remove from heat and let cool undisturbed for about 10 minutes.
- Add vanilla extract and beat vigorously until the fudge thickens and loses its glossy shine.
- Pour immediately into the prepared pan and spread evenly.
- Allow to cool completely at room temperature before cutting into squares.
Notes
- Do not stir while boiling to avoid grainy fudge.
- Use the cold water test if you do not have a candy thermometer.
- Add nuts or flavorings just before pouring into the pan if desired.
