Description

Ingredients

  • 4 tablespoons butter or vegan butter
  • 1 cup carrots, peeled and sliced
  • 4 oz mushrooms, sliced
  • 2 celery ribs, thinly sliced
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 2 cups chicken broth
  • 1 cup milk
  • 1/2 cup heavy cream
  • 2 cups cooked chicken, shredded or diced
  • 1 pound potato gnocchi
  • 1 cup frozen peas
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried parsley
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika

Instructions

  1. Melt the butter in a large deep skillet or pot over medium heat.
  2. Add the onion, carrots, celery, and mushrooms. Cook for 5 to 7 minutes, stirring occasionally, until the vegetables begin to soften.
  3. Add the garlic and cook for 1 minute, until fragrant.
  4. Sprinkle the flour over the vegetables and stir well to coat evenly. Cook for 1 minute to remove the raw flour taste.
  5. Slowly pour in the chicken broth while stirring constantly to avoid lumps. Add the milk and heavy cream, then stir until smooth and slightly thickened.
  6. Add the cooked chicken, gnocchi, thyme, parsley, salt, black pepper, and paprika. Stir well to combine.
  7. Bring the mixture to a gentle simmer, cover, and cook for 5 to 7 minutes, stirring occasionally, until the gnocchi is tender.
  8. Stir in the frozen peas and cook for 2 more minutes, until heated through.
  9. Taste and adjust seasoning if needed. Remove from heat and let sit for a few minutes before serving so the sauce thickens slightly.

Notes

  • Store-bought shelf-stable or refrigerated gnocchi both work well in this recipe.
  • Leftover cooked chicken or turkey can be used for convenience.
  • For a vegetarian version, omit the chicken and use vegetable broth.
