Description

Golden, crispy oven-baked garlic fries that are crunchy on the outside and fluffy on the inside. Coated with cornstarch, garlic, and spices, they deliver bold flavor without deep-frying. Perfect as a side, snack, or party favorite.


Ingredients

  • 1 1/2 pounds russet potatoes (about 3 large)
  • 6 tablespoons olive oil
  • 8 garlic cloves, finely minced
  • 4 tablespoons cornstarch
  • 1 1/2 teaspoons coarse sea salt
  • 1 1/2 teaspoons freshly ground black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper

Instructions

  1. Preheat oven to 425°F (220°C). Line a large baking sheet with parchment paper or lightly grease.
  2. Wash and optionally peel potatoes. Cut into 1/4-inch sticks for even cooking.
  3. Soak cut potatoes in cold water for at least 30 minutes to remove excess starch.
  4. Drain and pat potatoes completely dry with a clean towel.
  5. Toss dried potatoes with olive oil until evenly coated.
  6. In a small bowl, mix cornstarch, sea salt, black pepper, garlic powder, and cayenne. Sprinkle over potatoes and toss to coat evenly.
  7. Spread fries in a single layer on the baking sheet without overlapping.
  8. Roast for 20 minutes, flip, then roast another 15–20 minutes until golden and crispy.
  9. During the last 5 minutes, sprinkle minced garlic evenly over fries and return to the oven.
  10. Remove and serve immediately while hot and crispy.

Notes

  • Cheesy garlic fries: Add grated Parmesan during the last 5 minutes.
  • Herb garlic fries: Add 1 tsp dried oregano or Italian seasoning to the cornstarch mixture.
  • Spicy version: Increase cayenne to 1/2 tsp or add chili flakes before serving.
  • Extra crispy: Use a wire rack on the baking sheet for airflow.
  • Skin-on fries: Leave skins for texture and rustic flavor.
