Ingredients

Instructions
- Preheat oven to 325°F (163°C). Grease a 9-inch springform pan or line the bottom with parchment.
- Mix graham cracker crumbs, melted butter, and brown sugar. Press firmly into pan to form crust. Bake 10 minutes; cool.
- Beat cream cheese until smooth. Add sugar, then eggs one at a time, mixing slowly.
- Stir in sour cream, vanilla, and cornstarch until smooth.
- Pour filling over cooled crust, smooth top. Bake 50–60 minutes until center is slightly set. Leave in oven with door ajar for 1 hour; then refrigerate 4 hours or overnight.
- Prepare peach topping: In a saucepan, combine peaches, brown sugar, cinnamon, lemon juice, cornstarch, and water. Cook 5–7 minutes until thickened; cool.
- For crumble: Mix flour, sugars, cinnamon, and melted butter until crumbly.
- Spread cooled peach topping over cheesecake. Sprinkle crumble over peaches before serving.
