Ingredients
- 2 cups peaches, peeled and chopped
- 1 tablespoon fresh lemon juice
- 2 tablespoons butter
- 1/3 cup granulated sugar
- 1/4 cup brown sugar
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 teaspoon vanilla extract
- 1 tablespoon cornstarch
- 2 tablespoons water
- 10 egg roll wrappers
- Vegetable oil for frying
- 2 tablespoons sugar (for coating)
- 1/2 teaspoon cinnamon (for coating)
Instructions
- In a saucepan, melt butter over medium heat and add peaches, lemon juice, granulated sugar, brown sugar, cinnamon, and nutmeg.
- Cook for 5–7 minutes until peaches soften.
- Mix cornstarch with water, add to the mixture, and stir until thickened.
- Remove from heat, stir in vanilla extract, and let cool completely.
- Place an egg roll wrapper in a diamond shape and add about 2 tablespoons of filling in the center.
- Fold bottom corner over filling, fold sides inward, and roll tightly, sealing edges with water.
- Heat oil to 175°C (350°F) and fry egg rolls in batches for 2–3 minutes until golden and crispy.
- Remove and drain on paper towels.
- Mix sugar and cinnamon, then roll warm egg rolls in the mixture.
- Serve warm for best flavor and texture.

- Ensure filling is completely cooled before assembling.
