Description

Soft Medjool dates stuffed with creamy peanut butter, rolled in chopped nuts and coconut flakes — a chewy, satisfying no‑bake treat perfect for snacks or dessert.


Ingredients

  • 20 Medjool dates, pitted
  • ½ cup natural peanut butter
  •  cup chopped nuts (almonds or walnuts)
  • ½ cup unsweetened coconut flakes
  • 12 tablespoons honey or maple syrup (optional)

Instructions

  1. Slice each Medjool date lengthwise and remove the pit, keeping the date intact.
  2. Fill each date with about 1 teaspoon of peanut butter.
  3. Press the chopped nuts into the peanut butter filling.
  4. Roll each stuffed date in the coconut flakes until well coated.
  5. If using, lightly drizzle honey or maple syrup over the bites.
  6. Arrange on a plate or tray and serve, or store chilled.

Notes

  • Substitute almond butter, cashew butter or a seed butter if desired.
  • Roll in cocoa powder or drizzle melted dark chocolate for a decadent twist.
  • Sprinkle flaky sea salt for a sweet‑salty contrast.
