Ingredients
- 20 Medjool dates, pitted
- ½ cup natural peanut butter
- ⅓ cup chopped nuts (almonds or walnuts)
- ½ cup unsweetened coconut flakes
- 1–2 tablespoons honey or maple syrup (optional)
Instructions
- Slice each Medjool date lengthwise and remove the pit, keeping the date intact.
- Fill each date with about 1 teaspoon of peanut butter.
- Press the chopped nuts into the peanut butter filling.
- Roll each stuffed date in the coconut flakes until well coated.
- If using, lightly drizzle honey or maple syrup over the bites.
- Arrange on a plate or tray and serve, or store chilled.
