Ingredients

  • 4 boneless, skinless chicken breasts

  • 4 pineapple rings (fresh or canned, drained)
  • 1 cup shredded Gouda cheese

Sweet Chili Cream Sauce:

Instructions

  1. Preheat oven to 375°F (190°C). Grease a baking dish or use an oven-safe skillet.
  2. Pat chicken dry and season with salt, black pepper, garlic powder, and paprika.
  3. Heat olive oil in a skillet over medium-high heat. Sear chicken 4–5 minutes per side until golden brown.
  4. Transfer chicken to baking dish. Place one pineapple ring on each breast. Sprinkle shredded Gouda over the chicken.
  5. Bake 18–22 minutes until chicken is fully cooked and cheese melts.
  6. Prepare sauce: In a small saucepan over low heat, combine sweet chili sauce, heavy cream, mayonnaise, lime juice, garlic powder, and red pepper flakes. Stir until smooth and slightly thickened, 3–4 minutes.
  7. Remove chicken from oven, drizzle with warm sweet chili cream sauce, and serve.
