Description
A creamy and hearty cheeseburger-inspired soup made with ground beef, tender vegetables, potatoes, and melted cheddar cheese. This comforting one-pot meal delivers classic burger flavors in a warm and satisfying bowl.
Ingredients
- 1 pound ground beef
- 1 small onion, chopped
- 2 carrots, diced
- 2 celery stalks, chopped
- 2 medium potatoes, peeled and diced
- 3 cups chicken broth
- 2 cups whole milk
- 2 cups shredded cheddar cheese
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1 tablespoon chopped parsley
Instructions
- Heat a large soup pot or Dutch oven over medium heat and cook the ground beef until browned, about 7 minutes, breaking it apart as it cooks.
- Add the chopped onion, diced carrots, and chopped celery. Cook for about 5 minutes until the vegetables soften.
- Add the diced potatoes and pour in the chicken broth. Bring to a gentle boil, then reduce heat and simmer for about 15 minutes until the potatoes are tender.
- In a small pan, melt the butter over medium heat. Stir in the flour and cook for about 2 minutes to form a smooth roux.
- Slowly stir the roux into the soup pot to thicken the soup.
- Pour in the milk and stir gently. Add salt, black pepper, and paprika.
- Simmer for about 5 minutes so the flavors combine.
- Reduce heat to low and gradually stir in the shredded cheddar cheese until fully melted and the soup becomes creamy.
- Sprinkle chopped parsley over the soup and adjust seasoning if needed before serving.
Notes
- Use freshly shredded cheddar for smoother melting.
- Avoid boiling the soup after adding cheese to prevent a grainy texture.
- Add corn, peas, or bell peppers for extra vegetables.
- Ground turkey can replace ground beef for a lighter option.
- If the soup thickens too much, add a splash of milk or broth when reheating.
