Description

A creamy and hearty cheeseburger-inspired soup made with ground beef, tender vegetables, potatoes, and melted cheddar cheese. This comforting one-pot meal delivers classic burger flavors in a warm and satisfying bowl.

Ingredients

  • 1 pound ground beef
  • 1 small onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, chopped
  • 2 medium potatoes, peeled and diced
  • 3 cups chicken broth
  • 2 cups whole milk
  • 2 cups shredded cheddar cheese
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1 tablespoon chopped parsley

Instructions

  1. Heat a large soup pot or Dutch oven over medium heat and cook the ground beef until browned, about 7 minutes, breaking it apart as it cooks.
  2. Add the chopped onion, diced carrots, and chopped celery. Cook for about 5 minutes until the vegetables soften.
  3. Add the diced potatoes and pour in the chicken broth. Bring to a gentle boil, then reduce heat and simmer for about 15 minutes until the potatoes are tender.
  4. In a small pan, melt the butter over medium heat. Stir in the flour and cook for about 2 minutes to form a smooth roux.
  5. Slowly stir the roux into the soup pot to thicken the soup.
  6. Pour in the milk and stir gently. Add salt, black pepper, and paprika.
  7. Simmer for about 5 minutes so the flavors combine.
  8. Reduce heat to low and gradually stir in the shredded cheddar cheese until fully melted and the soup becomes creamy.
  9. Sprinkle chopped parsley over the soup and adjust seasoning if needed before serving.

Notes

  • Use freshly shredded cheddar for smoother melting.
  • Avoid boiling the soup after adding cheese to prevent a grainy texture.
  • Add corn, peas, or bell peppers for extra vegetables.
  • Ground turkey can replace ground beef for a lighter option.
  • If the soup thickens too much, add a splash of milk or broth when reheating.
