Ingredients
- 1½ cups graham cracker crumbs
- 6 tablespoons melted butter
- 2 tablespoons sugar (optional)
- 16 ounces cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- ½ cup heavy whipping cream
- 1/3 cup pistachio cream or pistachio paste
- 2 tablespoons heavy cream (for pistachio layer)
- 1 tablespoon powdered sugar
- ½ cup finely crushed pistachios
Instructions
- In a bowl, mix graham cracker crumbs, melted butter, and sugar (if using) until the texture resembles wet sand.
- Press the crust mixture firmly into the bottom of a springform pan or serving dish and refrigerate to set.
- In another bowl, beat softened cream cheese until smooth. Add powdered sugar and vanilla extract and mix until combined.
- Whip the heavy cream separately until soft peaks form. Gently fold it into the cream cheese mixture.
- Spread the cheesecake filling evenly over the chilled crust and return to the refrigerator.
- In a small bowl, mix pistachio cream with heavy cream and powdered sugar until smooth and slightly thickened.
- Spread the pistachio mixture over the cheesecake layer and sprinkle crushed pistachios on top.
- Chill the cheesecake for at least 4 hours, or until fully set, before serving.
