Ingredients

  • 4 large potatoes (about 800 g), peeled and thinly sliced
  • 1 large onion, thinly sliced
  • 1 green bell pepper, sliced
  • 1 red bell pepper, sliced
  • 4 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon sweet paprika
  • 1/2 teaspoon dried oregano
  • 100 ml water

Instructions

  1. Prepare vegetables by slicing potatoes, onion, and peppers thinly.
  2. Heat olive oil in a large skillet over medium heat.
  3. Add onion and cook for 5 minutes until softened.
  4. Add garlic and cook for 1 minute.
  5. Add peppers and cook for 5–7 minutes until slightly softened.
  6. Add potatoes and gently mix to combine.
  7. Season with salt, pepper, paprika, and oregano.
  8. Add water, reduce heat, cover, and cook for 20–25 minutes.
  9. Stir occasionally to prevent sticking.
  10. Remove lid and cook 5–10 minutes more until lightly browned.
  11. Serve warm.

  • Add more water for a softer, stew-like texture.
