Ingredients

  • Pecan Shortbread Crust:
  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/2 cup finely chopped pecans
  • 2 tablespoons granulated sugar
  • Cream Cheese Layer:
  • 8 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1 cup whipped topping
  • Chocolate Pudding Layer:
  • 1 package (3.9 ounces) instant chocolate pudding mix
  • 1 1/2 cups cold milk
  • Top Layer:
  • 1 1/2 cups whipped topping
  • 1/4 cup finely chopped pecans
  • 2 tablespoons chocolate shavings (optional)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Mix flour, butter, chopped pecans, and sugar until crumbly and combined.
  3. Press mixture firmly into the bottom of a 9-inch pie dish.
  4. Bake 15–18 minutes until lightly golden. Cool completely.
  5. Beat cream cheese until smooth. Add powdered sugar and mix until creamy. Fold in 1 cup whipped topping.
  6. Spread cream cheese mixture evenly over cooled crust.
  7. Whisk pudding mix with cold milk for 2 minutes until thickened. Let sit 5 minutes to set.
  8. Spread pudding over cream cheese layer.
  9. Top with remaining whipped topping and smooth gently.
  10. Garnish with chopped pecans and chocolate shavings if desired.
  11. Refrigerate at least 4 hours before serving.
