Ingredients
- Pecan Shortbread Crust:
- 1 cup all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/2 cup finely chopped pecans
- 2 tablespoons granulated sugar
- Cream Cheese Layer:
- 8 ounces cream cheese, softened
- 1 cup powdered sugar
- 1 cup whipped topping
- Chocolate Pudding Layer:
- 1 package (3.9 ounces) instant chocolate pudding mix
- 1 1/2 cups cold milk
- Top Layer:
- 1 1/2 cups whipped topping
- 1/4 cup finely chopped pecans
- 2 tablespoons chocolate shavings (optional)
Instructions
- Preheat oven to 350°F (175°C).
- Mix flour, butter, chopped pecans, and sugar until crumbly and combined.
- Press mixture firmly into the bottom of a 9-inch pie dish.
- Bake 15–18 minutes until lightly golden. Cool completely.
- Beat cream cheese until smooth. Add powdered sugar and mix until creamy. Fold in 1 cup whipped topping.
- Spread cream cheese mixture evenly over cooled crust.
- Whisk pudding mix with cold milk for 2 minutes until thickened. Let sit 5 minutes to set.
- Spread pudding over cream cheese layer.
- Top with remaining whipped topping and smooth gently.
- Garnish with chopped pecans and chocolate shavings if desired.
- Refrigerate at least 4 hours before serving.
