Description

This potato cheddar chive bake is a protein-packed, meal-prep-friendly breakfast made with tender potatoes, blended eggs, cottage cheese, and sharp cheddar. Creamy, cheesy, and flavorful, it’s a homemade version of the popular coffee shop favorite.


Ingredients

  • 1 1/2 teaspoons olive oil
  • 1 medium russet potato (about 8 ounces), peeled and diced into 1/4-inch cubes
  • 3/4 teaspoon kosher salt, divided
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon sweet paprika
  • Freshly ground black pepper, to taste
  • 6 large eggs
  • 1/4 cup liquid egg whites
  • 2/3 cup 2% cottage cheese
  • 2 tablespoons 2% milk
  • 1 cup shredded sharp cheddar cheese, divided
  • 2 tablespoons chopped fresh chives

Instructions

  1. Preheat oven to 325°F (163°C). Lightly grease a square baking pan or muffin pan and place it on a rimmed baking sheet.
  2. Heat olive oil in a nonstick skillet over medium heat. Add diced potato, 1/2 teaspoon salt, garlic powder, paprika, and black pepper. Cover and cook over medium-low heat, stirring occasionally, for about 12 minutes until tender. Add 1 tablespoon water halfway through if needed. Cool for 5 minutes.
  3. In a blender, combine eggs, egg whites, cottage cheese, milk, remaining 1/4 teaspoon salt, and black pepper. Blend 20–30 seconds until smooth. Stir in chopped chives.
  4. Spread cooked potatoes evenly into the prepared pan. Sprinkle 1/2 cup cheddar over the potatoes.
  5. Pour egg mixture evenly over the top, filling about 3/4 full. Sprinkle remaining 1/2 cup cheddar on top.
  6. Bake for 25–30 minutes, until centers are set and tops appear dry. Do not overbake.
  7. Cool for 10 minutes before slicing or removing from pan.

  • Blend the egg mixture well for a smoother, creamier texture.
  • Do not overbake to prevent rubbery eggs.
  • Store in refrigerator for up to 4 days.
  • Freeze for up to 2 months; reheat in microwave or air fryer.
