Ingredients

  • 2 pounds boneless skinless chicken thighs
  • 2 tablespoons olive oil
  • 1 tablespoon brown sugar
  • 2 teaspoons smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • 1 teaspoon kosher salt
  • 1 teaspoon dry mustard powder
  • 1 teaspoon chili powder (optional)
  • 1/2 teaspoon black pepper
  • 1/2 cup barbecue sauce

Instructions

  1. In a small bowl, mix brown sugar, paprika, garlic powder, cumin, salt, mustard powder, chili powder (if using), and black pepper.
  2. Place chicken in a large bowl, drizzle with olive oil, and toss to coat. Add seasoning blend and mix well.
  3. Turn Instant Pot to sauté (high). Sear chicken for 2–3 minutes per side until browned.
  4. Pour barbecue sauce over the chicken and stir gently to deglaze the bottom.
  5. Seal lid and pressure cook on high for 5 minutes. Quick release pressure.
  6. Transfer chicken to a bowl and shred with two forks.
  7. Return shredded chicken to the pot and stir into the sauce until coated.
  8. Optional: broil in oven for a few minutes for crispy edges before serving.
