Ingredients

  • 1 cup graham cracker crumbs

Instructions

  1. Preheat the oven to 325 °F (160 °C) and line a muffin tin (about 12 cups) with paper liners.
  2. In a bowl, combine graham cracker crumbs and melted butter. Press firmly into the bottom of each muffin liner to form the crust.
  3. In a large bowl, beat the softened cream cheese until smooth. Add the pumpkin purée, both sugars, eggs, vanilla extract, cinnamon, nutmeg, ginger, salt, and cloves. Mix until silky and uniform.
  4. Divide the filling evenly over the prepared crusts, filling each about three‑quarters full.
  5. Bake for 20‑25 minutes, or until the centers are set with only a slight jiggle.
  6. Let the bites cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
  7. Chill the bites for at least 30 minutes (or longer) before serving.
