Ingredients
- 1 1/2 cups graham cracker crumbs

- 2/3 cup white sugar
- 2/3 cup brown sugar
- 1 teaspoon vanilla extract
- 15 ounces pumpkin puree
- 1 1/2 teaspoons pumpkin spice seasoning
- 1 cup sour cream, room temperature
- 3 large eggs, room temperature, lightly whisked
Instructions
- Preheat the oven to 325°F (163°C).
- In a bowl, mix graham cracker crumbs, melted butter, and 1 tablespoon sugar until the mixture resembles wet sand.
- Press the crumb mixture firmly into the bottom of a 9-inch springform pan to form an even crust.
- Bake the crust for 5 minutes, then remove and allow it to cool completely.
- In a mixing bowl, beat the cream cheese on low speed until smooth.
- Add white sugar, brown sugar, pumpkin puree, vanilla extract, and pumpkin spice. Mix on low speed until smooth.
- Add sour cream and mix gently until incorporated.
- Slowly add the lightly whisked eggs and mix on low speed until just combined.
- Pour the filling over the cooled crust and spread evenly.
- Bake for 60 minutes until the edges are set and the center is slightly soft.
- Turn off the oven and leave the cheesecake inside with the door closed for about 2 hours to cool slowly.
- Remove from the oven, cool completely at room temperature, then refrigerate for at least 2 hours before serving.
