Description

Ingredients
- 1 cup granulated sugar
- 1 cup packed brown sugar
- 1 cup light corn syrup
- 1 can (14 ounces) sweetened condensed milk
- ½ cup unsalted butter
- Butter, for greasing the dish
Instructions
- Generously butter an 8×8-inch baking dish and set aside.
- In a large microwave-safe bowl, combine granulated sugar, brown sugar, corn syrup, sweetened condensed milk, and butter.
- Microwave on high for 90 seconds, remove carefully, and stir well.
- Continue microwaving in 90-second intervals, stirring each time, until the mixture reaches 250°F on a candy thermometer (about 8–10 minutes total).
- Pour the hot caramel into the prepared dish immediately.
- Allow caramels to cool completely at room temperature until fully set.
- Cut into small squares and serve.
Notes
- Add a pinch of sea salt after pouring for a slightly salted caramel.
- Stir in 1 teaspoon vanilla extract before pouring for a richer flavor.
- Wrap individual pieces in parchment paper for gifting or longer storage.
- Store in an airtight container at room temperature for up to 1 week, or refrigerate in warm climates.
- Let refrigerated caramels sit at room temperature for a few minutes before serving to soften slightly.
