Ingredients
½ cup ranch dressing
¼ cup grated parmesan cheese
2 tablespoons olive oil
3 cloves garlic, minced
1 teaspoon dried parsley (or fresh parsley, chopped)
½ teaspoon black pepper
½ teaspoon garlic powder
1 teaspoon lemon juice (optional)
1½ lbs boneless, skinless chicken breasts or thighs, cut into 1-inch cubes

Instructions
- In a bowl, mix ranch dressing, parmesan cheese, olive oil, minced garlic, parsley, black pepper, garlic powder, and optional lemon juice until smooth.
- Add chicken cubes to a resealable bag or dish, coat with marinade, and refrigerate for at least 30 minutes.
- If using wooden skewers, soak them in water for 15 minutes. Thread marinated chicken onto skewers, leaving space between pieces.
- Preheat grill to medium-high heat. Grill skewers for 10–15 minutes, turning occasionally, until chicken reaches 165°F (75°C) internally.
- Let rest for a few minutes before serving. Garnish with fresh parsley or extra parmesan.

- For extra heat, add red pepper flakes or hot sauce to the marinade.
- Thighs offer juicier results, while breasts are leaner.
- Can be cooked indoors using a grill pan or oven broiler.
