Description

Ingredients

½ cup ranch dressing

¼ cup grated parmesan cheese

2 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon dried parsley (or fresh parsley, chopped)

½ teaspoon black pepper

½ teaspoon garlic powder

1 teaspoon lemon juice (optional)

lbs boneless, skinless chicken breasts or thighs, cut into 1-inch cubes

Instructions

  1. In a bowl, mix ranch dressing, parmesan cheese, olive oil, minced garlic, parsley, black pepper, garlic powder, and optional lemon juice until smooth.
  2. Add chicken cubes to a resealable bag or dish, coat with marinade, and refrigerate for at least 30 minutes.
  3. If using wooden skewers, soak them in water for 15 minutes. Thread marinated chicken onto skewers, leaving space between pieces.
  4. Preheat grill to medium-high heat. Grill skewers for 10–15 minutes, turning occasionally, until chicken reaches 165°F (75°C) internally.
  5. Let rest for a few minutes before serving. Garnish with fresh parsley or extra parmesan.

  • Thighs offer juicier results, while breasts are leaner.
