Ingredients
- 1 oz passionfruit juice
- 1 oz raspberry syrup
- 3/4 oz freshly squeezed lime juice
- 1/2 oz simple syrup (optional, to taste)
- 1 oz aquafaba or 1 egg white
- 2 oz sparkling water or club soda (added after shaking)
- Ice for shaking
- Fresh raspberries and lime wedges for garnish
Instructions
- Juice the lime and prepare all ingredients in advance.
- In a cocktail shaker, combine passionfruit juice, raspberry syrup, lime juice, and aquafaba or egg white.
- Dry shake (without ice) vigorously for 15–20 seconds to build foam.
- Add ice and shake again for another 15–20 seconds until chilled.
- Double-strain into a chilled coupe or martini glass.
- Top with sparkling water or club soda.
- Garnish with fresh raspberries or a lime wedge and serve immediately.
