Description

Ingredients

  • 1 box (15.25 oz) red velvet cake mix
  • 3 large eggs (for the cake mix)
  • 1/2 cup vegetable oil (for the cake mix)
  • 1 cup water (for the cake mix)
  • 1 package (14 oz) egg roll wrappers
  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup powdered sugar (for dusting)
  • Vegetable oil, for frying (about 3 cups or enough for deep frying)

Instructions

  1. Prepare the red velvet cake according to package instructions with eggs, oil, and water. Let it cool completely and crumble it into fine pieces.
  2. In a bowl, beat softened cream cheese with granulated sugar and vanilla extract until smooth.
  3. Place an egg roll wrapper on a clean surface with a corner facing you. Add 2 tablespoons of red velvet cake crumbs and 1 tablespoon of cheesecake mixture to the center.
  4. Fold the bottom corner over the filling, fold in the sides, and roll up tightly. Seal the edge with a dab of water.
  5. Heat vegetable oil in a deep skillet or fryer to 350°F (175°C).
  6. Fry egg rolls in batches for 2–3 minutes per side until golden brown. Drain on paper towels.
  7. Dust with powdered sugar before serving.

Notes

  • For added texture, mix in crushed Oreos, mini chocolate chips, or white chocolate chunks with the cheesecake filling.
