This Roasted Jalapeño Popper Grilled Cheese is a spicy, creamy twist on the classic comfort sandwich. Featuring roasted jalapeños, melty cheeses, and crispy golden bread, it’s an indulgent and flavorful meal perfect for lunch or dinner.
Ingredients
- 4 slices sandwich bread (white, sourdough, or brioche)
- 2 tbsp butter, softened
- 4 oz cream cheese, softened
- 2 fresh jalapeños
- 1 cup shredded mozzarella cheese
- 1/2 cup shredded cheddar cheese
- Salt, to taste
Instructions
- Preheat oven to 400°F (200°C). Roast whole jalapeños on a baking sheet for 10–15 minutes, turning once, until skins blister. Cool, peel, and remove seeds if desired.
- Mix softened cream cheese with a pinch of salt and spread on two slices of bread.
- Top cream cheese with sliced roasted jalapeños, then add mozzarella and cheddar cheese.
- Place remaining bread slices on top to form sandwiches. Butter the outsides of both sandwiches.
- Cook in a skillet over medium heat for 3–4 minutes per side, until golden brown and cheese is melted.
- Let sandwiches rest for 1 minute before slicing and serving.
Notes
- Remove jalapeño seeds for a milder version.
- Try sourdough for a crispier texture, or brioche for a rich flavor.
- Use different cheeses like pepper jack or gouda for variety.
- Can be cooked in an air fryer at 370°F (190°C) for 5–6 minutes, flipping halfway.
- Serve with tomato soup, pickles, or a side salad.
