Ingredients

  • 2 pounds beef chuck roast, cut into 2-inch chunks
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 medium yellow onion, finely chopped
  • 4 cloves garlic, minced
  • 1/2 cup balsamic vinegar
  • 1/3 cup pure honey
  • 1 cup low-sodium beef broth
  • 1 tablespoon fresh rosemary, finely chopped
  • 1 tablespoon fresh thyme leaves
  • 1 tablespoon tomato paste
  • 1 tablespoon cornstarch
  • 2 tablespoons water

Instructions

  1. Pat beef dry and season with salt and pepper.
  2. Heat olive oil in a heavy-bottomed pot or Dutch oven over medium-high heat. Sear beef in batches until browned on all sides, about 3–4 minutes per batch. Remove and set aside.
  3. Add chopped onion to the pot and cook 4–5 minutes until softened. Stir in garlic and cook 30 seconds.
  4. Add tomato paste and cook 1 minute, stirring constantly.
  5. Pour in balsamic vinegar and deglaze the pot, scraping up browned bits.
  6. Stir in honey, beef broth, rosemary, and thyme. Bring to a gentle simmer.
  7. Return beef to the pot. Cover and simmer on low for 1 hour 30 minutes until fork-tender.
  8. Mix cornstarch and water to create a slurry. Stir into the pot and simmer uncovered 5–10 minutes until sauce thickens.
  9. Taste and adjust seasoning. Serve warm.

  • Sear beef properly for deeper flavor.
  • Fresh herbs provide the best aroma, but dried herbs may be substituted.
