Ingredients
- 1 sheet puff pastry, thawed
- 2 tablespoons olive oil
- 2 tablespoons butter
- 8 ounces cremini or button mushrooms, thinly sliced
- 1 small shallot, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ¾ cup shredded Gruyère cheese
- 2 tablespoons grated Parmesan cheese
- 1 tablespoon heavy cream
- 1 teaspoon Dijon mustard
- 1 egg, beaten (for egg wash)
- 1 tablespoon chopped fresh parsley for garnish
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Roll out puff pastry slightly on a floured surface. Place on prepared baking sheet and score a ½-inch border around edges.
- In a skillet over medium heat, heat olive oil and butter. Add mushrooms and cook 6–8 minutes until moisture evaporates and they begin to brown.
- Add shallot and cook 2 minutes. Stir in garlic, thyme, salt, and pepper; cook 1 minute. Remove from heat and let cool slightly.
- Mix Dijon mustard and heavy cream; spread over the center of puff pastry inside the scored border.
- Sprinkle half of Gruyère over mustard layer, then layer mushrooms evenly. Top with remaining Gruyère and Parmesan cheese.
- Brush pastry edges with beaten egg.
- Bake 18–22 minutes until pastry is golden and cheese is melted.
- Cool a few minutes, garnish with parsley, and slice into 6 portions.
