Ingredients

  • 1 sheet puff pastry, thawed
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 8 ounces cremini or button mushrooms, thinly sliced
  • 1 small shallot, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¾ cup shredded Gruyère cheese
  • 2 tablespoons grated Parmesan cheese
  • 1 tablespoon heavy cream
  • 1 teaspoon Dijon mustard
  • 1 egg, beaten (for egg wash)
  • 1 tablespoon chopped fresh parsley for garnish

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Roll out puff pastry slightly on a floured surface. Place on prepared baking sheet and score a ½-inch border around edges.
  3. In a skillet over medium heat, heat olive oil and butter. Add mushrooms and cook 6–8 minutes until moisture evaporates and they begin to brown.
  4. Add shallot and cook 2 minutes. Stir in garlic, thyme, salt, and pepper; cook 1 minute. Remove from heat and let cool slightly.
  5. Mix Dijon mustard and heavy cream; spread over the center of puff pastry inside the scored border.
  6. Sprinkle half of Gruyère over mustard layer, then layer mushrooms evenly. Top with remaining Gruyère and Parmesan cheese.
  7. Brush pastry edges with beaten egg.
  8. Bake 18–22 minutes until pastry is golden and cheese is melted.
  9. Cool a few minutes, garnish with parsley, and slice into 6 portions.
