Savory Breakfast Pop-Tarts are flaky homemade pastries filled with creamy sausage gravy and scrambled eggs. Baked to golden perfection, these comforting hand pies are perfect for a hearty breakfast or brunch treat.


Ingredients

  • For the sausage gravy:
  • ¼ pound breakfast sausage
  • 2 tablespoons all-purpose flour
  • 1¼ cups whole milk
  • ¼ teaspoon seasoned salt
  • ½ teaspoon black pepper
  • ½ teaspoon minced fresh rosemary (optional)
  • A pinch of dried sage (optional)
  • For the egg filling:
  • 5 large eggs, scrambled
  • 1 cup shredded cheddar or Jack cheese (optional topping)
  • Your favorite seasoning blend (optional, for sprinkling)
  • For the pastry dough:
  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 1 cup vegetable shortening
  • ½ cup cold butter
  • 1 large egg
  • 1 tablespoon white vinegar
  • 5 tablespoons cold water
  • For assembly:
  • 1 large egg
  • 2 tablespoons water (for egg wash)

Instructions

  1. Cook breakfast sausage in a skillet over medium-high heat until browned, about 5–7 minutes.
  2. Stir in flour and cook for 2–3 minutes.
  3. Gradually whisk in milk and cook on medium-low until thickened, about 4–5 minutes.
  4. Season with salt, pepper, and optional rosemary and sage. Set aside.
  5. Scramble the eggs to preferred doneness. Set aside.
  6. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  7. Mix flour and salt in a bowl. Cut in shortening and butter until crumbly.
  8. Whisk egg, vinegar, and cold water. Add to flour mixture and stir until dough forms.
  9. Divide dough in half and roll out to ⅛-inch thick. Cut into 3×4-inch rectangles.
  10. Place half of the rectangles on the baking sheet. Brush edges with egg wash.
  11. Spoon sausage gravy and scrambled eggs onto each rectangle.
  12. Top with remaining dough, press edges with a fork to seal.
  13. Brush tops with egg wash. Sprinkle with cheese and seasoning if desired.
  14. Bake for 25 minutes or until golden. Cool for 5 minutes before serving.
