This Savory French Garlic Soup is a comforting and velvety blend of mellow garlic, fresh sage, and creamy emulsified egg and oil. A rustic yet elegant French classic perfect for cozy days.
Ingredients
64 ounces chicken stock (or vegetable broth)
Small bunch fresh sage
1 large head garlic
2/3 cup olive oil or vegetable oil
1 large egg, separated
1 teaspoon Dijon mustard
Pinch of salt
Instructions
- In a large pot, bring chicken stock and sage to a gentle simmer.
- Peel garlic cloves, halve them, and remove green shoots. Boil in water for 3–4 minutes, then drain.
- Mash boiled garlic until smooth and stir into simmering stock. Simmer for 10 minutes more.
- In a small jar, combine egg yolk, Dijon mustard, salt, and olive oil. Blend with an immersion blender until emulsified. Add egg white if a thicker texture is desired and blend again.
- Strain the soup for a refined texture and return it to the pot.
- Temper the egg mixture by stirring in a ladle of hot soup, then add back to the pot.
- Heat gently without boiling. Serve hot.
- Optional: Garnish with croutons, olive oil, smoked paprika, or chopped parsley.

- Use vegetable broth and plant-based mayo for a vegan version.
- Add white wine to the simmer for extra depth.
