Description

Shrimp toast is a crispy, golden appetizer featuring a savory minced shrimp filling sandwiched between soft white bread and fried or air fried until perfectly crunchy. With a juicy seafood center and crisp exterior, it’s a popular takeout-style snack perfect for gatherings or family meals.


Ingredients

  • 8 ounces raw shrimp, peeled and deveined
  • 1 ounce finely minced chicken fat (optional)
  • 2 stalks green onion, thinly sliced
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon granulated sugar
  • ¼ teaspoon white pepper
  • ¼ teaspoon monosodium glutamate (optional)
  • 4 slices white sandwich bread or Texas toast
  • Neutral oil for frying (about 2 inches deep) or oil spray for air frying
  • If omitting chicken fat: 1 teaspoon sesame oil and 1 teaspoon neutral oil

Instructions

  1. Place shrimp on a cutting board and flatten slightly. Finely chop until slightly pasty, mixing in minced chicken fat if using. Alternatively, pulse in a food processor until a sticky paste forms.
  2. Transfer shrimp mixture to a bowl. Add green onions, garlic powder, salt, sugar, white pepper, and optional monosodium glutamate. Mix until tacky and well combined.
  3. Spread shrimp mixture evenly over two slices of bread. Top with remaining slices and gently press to adhere. Cut into quarters if desired.
  4. For frying: Heat oil to 350°F (176°C). Fry shrimp toast about 4 minutes per side until golden brown and internal temperature reaches at least 140°F (60°C). Drain upright on a rack.
  5. For air frying: Spray both sides lightly with oil. Air fry at 375°F (190°C) for 12 minutes, flipping halfway, until golden and heated through.
  6. Cool slightly, slice, and serve warm.
