Ingredients

  • 1 lb (450 g) ground beef
  • 4 medium russet potatoes, peeled and thinly sliced (about 2 lbs / 900 g)
  • 1 can (10.5 oz / 300 g) condensed cream of mushroom soup
  • 1 medium yellow onion, thinly sliced
  • Optional: 1/2 teaspoon black pepper

Instructions

  1. Peel and thinly slice the potatoes to about 1/8-inch thickness. Thinly slice the onion.
  2. In a large skillet over medium heat, cook the ground beef until fully browned, breaking it apart as it cooks. Drain excess fat.
  3. Lightly grease a 6-quart slow cooker. Add a layer of sliced potatoes, followed by a portion of cooked ground beef, sliced onions, and a thin layer of condensed soup.
  4. Repeat the layers until all ingredients are used, finishing with soup on top.
  5. Cover and cook on low for 6–7 hours or on high for 3–4 hours, until potatoes are tender and the casserole is heated through.
  6. Let the casserole rest for 10–15 minutes before serving to allow it to set.

  • For a cheesy variation, add 1 cup shredded cheddar cheese between layers or during the last 20 minutes of cooking.
