Description

Tender slow-cooked beef simmered with onions and herbs in savory broth, then thickened into a rich gravy and served over fluffy rice for a comforting and hearty meal.


Ingredients

  • 2 pounds beef stew meat or beef chunks
  • 4 cups beef broth
  • 1 medium onion, finely chopped
  • 1 teaspoon Italian seasoning
  • 2 teaspoons salt, or to taste
  • 1 teaspoon black pepper, or to taste
  • 1/4 cup cold water
  • 3 tablespoons cornstarch
  • 4 to 6 cups cooked white or brown rice
  • 2 tablespoons fresh parsley, chopped (optional)

Instructions

  1. Place the beef chunks in the bottom of the slow cooker.
  2. Add the chopped onion and pour in the beef broth.
  3. Sprinkle the salt, black pepper, and Italian seasoning evenly over the ingredients.
  4. Stir gently to combine.
  5. Cover and cook on low for 8 hours or on high for 4 hours until the beef is tender.
  6. About 10–15 minutes before serving, transfer the slow cooker contents to a pot and bring to a gentle boil.
  7. In a small bowl whisk together cold water and cornstarch to make a slurry.
  8. Slowly pour the slurry into the pot while stirring continuously.
  9. Cook and stir until the sauce thickens into a rich gravy.
  10. Serve the beef and gravy over warm cooked rice.
  11. Garnish with chopped parsley if desired.

Notes

  • Chuck roast cut into chunks works well if stew meat is unavailable.
  • Add sliced mushrooms for extra flavor.
  • Minced garlic can be added with the onions for a garlic-herb variation.
  • Vegetables like carrots, peas, or green beans can be added during the last hour of cooking.
  • If the gravy becomes too thick during reheating, add a small amount of broth.
  • Soy sauce can be added to deepen the savory flavor.
