Ingredients
- 2.5 lbs (1.1 kg) beef chuck roast, cut into large chunks
- Salt and black pepper, to taste
- 2 tbsp (30 ml) olive oil
- 6 tbsp (85 g) unsalted butter, melted
- 5 cloves garlic, minced
- 1 tsp dried Italian herbs
- 1/2 tsp crushed red pepper flakes (optional)
- 1/4 cup fresh parsley, chopped
- 2 lbs (900 g) baby Yukon Gold potatoes, halved
- 1/2 cup (120 ml) low-sodium beef broth
- 1 medium onion, sliced (optional)
- 1 cup (150 g) carrots, chopped (optional)
Instructions
- Pat the beef dry with paper towels and season generously with salt and black pepper.
- Heat olive oil in a skillet over medium-high heat and sear the beef for 2–3 minutes per side until browned (optional but recommended).
- Place halved potatoes at the bottom of the slow cooker. Add beef on top, followed by onions and carrots if using.
- In a bowl, mix melted butter, garlic, Italian herbs, red pepper flakes, and parsley to create the garlic butter sauce.
- Pour beef broth into the slow cooker, then drizzle the garlic butter mixture over everything. Gently toss to coat.
- Cover and cook on low for 7–8 hours or high for 4–5 hours until beef is tender and potatoes are cooked through.
- Taste and adjust seasoning. Mash a few potatoes into the sauce if a thicker consistency is desired.
- Serve warm, garnished with additional parsley.

- Searing the beef enhances flavor but can be skipped for convenience.
