Ingredients

  • 2.5 lbs (1.1 kg) beef chuck roast, cut into large chunks
  • Salt and black pepper, to taste
  • 2 tbsp (30 ml) olive oil
  • 6 tbsp (85 g) unsalted butter, melted
  • 5 cloves garlic, minced
  • 1 tsp dried Italian herbs
  • 1/2 tsp crushed red pepper flakes (optional)
  • 1/4 cup fresh parsley, chopped
  • 2 lbs (900 g) baby Yukon Gold potatoes, halved
  • 1/2 cup (120 ml) low-sodium beef broth
  • 1 medium onion, sliced (optional)
  • 1 cup (150 g) carrots, chopped (optional)

Instructions

  1. Pat the beef dry with paper towels and season generously with salt and black pepper.
  2. Heat olive oil in a skillet over medium-high heat and sear the beef for 2–3 minutes per side until browned (optional but recommended).
  3. Place halved potatoes at the bottom of the slow cooker. Add beef on top, followed by onions and carrots if using.
  4. In a bowl, mix melted butter, garlic, Italian herbs, red pepper flakes, and parsley to create the garlic butter sauce.
  5. Pour beef broth into the slow cooker, then drizzle the garlic butter mixture over everything. Gently toss to coat.
  6. Cover and cook on low for 7–8 hours or high for 4–5 hours until beef is tender and potatoes are cooked through.
  7. Taste and adjust seasoning. Mash a few potatoes into the sauce if a thicker consistency is desired.
  8. Serve warm, garnished with additional parsley.
