Ingredients
- 1 cup frozen blueberries
- 1/2 cup (1 stick) salted butter, softened
- 1/4 cup granulated white sugar
- 1/2 cup brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup white chocolate chips or chopped almond bark
Instructions
- Preheat the oven to 180°C (350°F) and line a baking tray with parchment paper.
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add the egg and vanilla extract, then mix until fully combined.
- In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients and mix until a soft dough forms.
- Gently fold in the frozen blueberries, then add the white chocolate chips or chopped almond bark and mix just until evenly distributed.
- Scoop portions of dough onto the prepared baking tray, leaving space between each cookie.
- Bake for 12 to 15 minutes, until the edges are lightly golden and the centers remain soft.
- Let the cookies cool on the tray for a few minutes, then transfer to a wire rack to cool completely.
Notes
- Use frozen blueberries straight from the freezer to reduce excess moisture and color bleeding.
- Fold the blueberries in gently so they do not burst too much.
