Ingredients
- 2 ½ cups all‑purpose flour
- 1 teaspoon baking powder

- 4 ounces cream cheese, softened
- 2 cups powdered sugar
- 1 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350 °F (175 °C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In a large bowl, beat softened butter, brown sugar, and granulated sugar until light and fluffy (about 2‑3 minutes).
- Add pumpkin puree, egg, and vanilla extract to the butter mixture and mix until combined.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined—do not overmix.
- Use a cookie scoop to drop dough onto the prepared baking sheet; flatten each slightly.
- Bake for 12–14 minutes, or until edges are set. Let cookies cool completely on a wire rack.
- While the cookies cool, prepare the frosting: beat butter and cream cheese until smooth, then add powdered sugar, cinnamon, and vanilla extract and beat until creamy.
- Once cookies are fully cooled, frost generously and optionally dust a little extra cinnamon on top.
