Description

Spanish Sunday Cake, known as Torta Dominguera, is a light and tender homemade cake made with yogurt, eggs, and citrus zest. It has a soft crumb, gentle sweetness, and a fragrant lemon sugar topping, making it perfect to enjoy with coffee or tea.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup plain Greek yogurt
  • 1/2 cup vegetable oil
  • 1 tablespoon lemon zest
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 tablespoons milk
  • 2 tablespoons granulated sugar (for topping)
  • 1 tablespoon lemon zest (for topping)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and line a 9-inch round cake pan with parchment paper.
  2. In a large bowl, whisk together the eggs and granulated sugar until pale and slightly thickened.
  3. Add the Greek yogurt, vegetable oil, vanilla extract, and lemon zest. Mix until smooth and well combined.
  4. In another bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
  6. Stir in the milk to loosen the batter slightly and create a smooth consistency.
  7. Pour the batter into the prepared cake pan and smooth the top.
  8. Mix the remaining sugar with lemon zest and sprinkle evenly over the batter.
  9. Bake for 35–40 minutes until a toothpick inserted in the center comes out clean.
  10. Allow the cake to cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
