Description

This Spiced Roast Chicken with Tangy Yogurt Sauce features juicy chicken thighs rubbed with bold Middle Eastern-inspired spices, roasted until golden, and served with a creamy, zesty yogurt sauce. It’s fast, flavorful, and perfect with salad, rice, or pita.


Ingredients

  • pounds boneless, skinless chicken thighs
  • 3 garlic cloves, minced
  • ¼ cup chopped fresh cilantro
  • 1½ teaspoons ground cumin
  • 1½ teaspoons ground coriander
  • 1 teaspoon smoked paprika
  • ½ teaspoon ground turmeric
  • ¼ teaspoon ground cinnamon
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 2 tablespoons olive oil
  • ¼ cup mayonnaise
  • ¼ cup plain yogurt
  • 1 tablespoon fresh lemon juice
  • 1 garlic clove, grated or finely minced
  • ¼ teaspoon ground cumin
  • Salt and pepper to taste
  • ½ head iceberg lettuce, shredded
  • 2 small tomatoes, diced

Instructions

  1. Preheat oven to 425°F (220°C).
  2. In a bowl, combine garlic, cilantro, cumin, coriander, paprika, turmeric, cinnamon, lemon juice, salt, pepper, and olive oil.
  3. Add chicken thighs and coat well. Let sit for 10 minutes while oven heats.
  4. Spread chicken on a baking sheet and roast for 18–22 minutes until cooked through and golden brown.
  5. In a small bowl, mix mayonnaise, yogurt, lemon juice, garlic, cumin, salt, and pepper to make the yogurt sauce.
  6. Chop lettuce and dice tomatoes for serving.
  7. Slice or chop cooked chicken and serve with salad and yogurt sauce.
