Spinach Cheese Stuffed Pastry features a savory blend of sautéed spinach, garlic, onion, and melty cheese wrapped in golden, flaky pastry. It’s a versatile vegetarian dish perfect for light lunches, appetizers, or cozy dinners.
Ingredients
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 4 cups fresh spinach leaves (about 8 oz), chopped
- 1 cup cheese (ricotta, feta, Parmesan, or mozzarella)
- 1 sheet puff pastry or pastry dough
- Salt and pepper, to taste
- 1 tablespoon olive oil or butter
- 1 egg, beaten (for egg wash)
Instructions
- Preheat oven to 200°C (400°F). Line a baking sheet with parchment paper.
- Heat olive oil or butter in a skillet over medium heat. Add chopped onion and sauté until soft.
- Add garlic and cook for 1 minute until fragrant.
- Stir in spinach and cook until wilted. Season with salt and pepper. Let mixture cool slightly.
- Roll out pastry and cut into desired shapes (squares, rectangles, or circles).
- Place a spoonful of spinach mixture on each pastry piece and top with cheese.
- Fold or cover with another pastry piece, seal edges, and crimp with a fork.
- Brush tops with beaten egg. Bake for 15–25 minutes until golden brown.
- Let cool slightly before serving warm.
Notes
- Use thawed, well-drained frozen spinach if fresh is unavailable.
- Blend cheeses for a richer flavor—mozzarella and Parmesan work great.
- Add herbs like dill, parsley, or mint for extra freshness.
- Freeze unbaked pastries for later—bake from frozen with extra time.
- Serve with yogurt dip or a side salad for a complete meal.
