Ingredients

  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 4 cups fresh spinach leaves (about 8 oz), chopped
  • 1 cup cheese (ricotta, feta, Parmesan, or mozzarella)
  • 1 sheet puff pastry or pastry dough
  • Salt and pepper, to taste
  • 1 tablespoon olive oil or butter
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat oven to 200°C (400°F). Line a baking sheet with parchment paper.
  2. Heat olive oil or butter in a skillet over medium heat. Add chopped onion and sauté until soft.
  3. Add garlic and cook for 1 minute until fragrant.
  4. Stir in spinach and cook until wilted. Season with salt and pepper. Let mixture cool slightly.
  5. Roll out pastry and cut into desired shapes (squares, rectangles, or circles).
  6. Place a spoonful of spinach mixture on each pastry piece and top with cheese.
  7. Fold or cover with another pastry piece, seal edges, and crimp with a fork.
  8. Brush tops with beaten egg. Bake for 15–25 minutes until golden brown.
  9. Let cool slightly before serving warm.
