Ingredients
- 4 boneless, skinless chicken breasts (about 2 pounds)
- 1 cup barbecue sauce
- 1 cup sweet chili sauce
- 1/4 cup low-sodium soy sauce
- 3 cups cooked white rice (for serving)
- 2 tablespoons chopped green onions (optional garnish)
Instructions
- Lightly spray the inside of the crockpot with cooking spray.
- Place the chicken breasts in a single layer in the slow cooker.
- In a bowl, whisk together barbecue sauce, sweet chili sauce, and soy sauce until combined.
- Pour the sauce evenly over the chicken, coating each piece.
- Cover and cook on low for 4–5 hours or high for 2–3 hours, until chicken reaches an internal temperature of 165°F (74°C).
- Shred the chicken directly in the crockpot using two forks and stir into the sauce.
- Let sit on warm for 10 minutes to slightly thicken.
- Serve hot over cooked white rice and garnish with chopped green onions if desired.
Notes
- For thicker sauce, remove lid during last 20 minutes or stir in a cornstarch slurry.
- Boneless, skinless chicken thighs can be substituted for extra juiciness.
- Store leftovers refrigerated for up to 4 days.
- Freeze cooled chicken and sauce for up to 3 months.
- Reheat gently with a splash of water to loosen sauce if needed.
