Description

Flaky, golden sugar-free apple hand pies filled with warmly spiced diced apples and wrapped in a tender almond flour crust. These perfectly portioned treats deliver classic apple pie flavor without added sugar, making them ideal for dessert or snacks.


Ingredients

  • For the rollable pie dough:
  • 2 cups almond flour
  • 1 cup mozzarella cheese, shredded
  • 2 tablespoons cream cheese
  • 1 large egg
  • 1 tablespoon powdered sugar-free sweetener
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • For the apple filling:
  • 2 medium Granny Smith apples, peeled and finely diced
  • 2 tablespoons unsalted butter
  • 1/4 cup brown sugar substitute (erythritol-based)
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon lemon juice
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon xanthan gum
  • For the egg wash:
  • 1 large egg
  • 1 tablespoon heavy cream
  • Optional glaze:
  • 1/2 cup powdered sugar-free sweetener
  • 1 to 2 tablespoons heavy cream
  • 1/4 teaspoon vanilla extract

Instructions

  1. In a skillet over medium heat, melt butter. Add diced apples and lemon juice. Cook for 5–7 minutes until slightly softened.
  2. Stir in brown sugar substitute, cinnamon, nutmeg, and vanilla. Sprinkle xanthan gum evenly and stir for 1–2 minutes until thickened. Remove from heat and cool completely.
  3. In a microwave-safe bowl, combine mozzarella and cream cheese. Microwave for 60–90 seconds, stirring halfway, until melted and smooth.
  4. Stir in almond flour, powdered sweetener, salt, egg, and vanilla extract. Mix until a smooth dough forms. Knead gently if needed.
  5. Place dough between parchment paper and roll to about 1/8-inch thickness. Cut into 12 circles (about 4 inches each).
  6. Place 1 tablespoon cooled filling onto the center of 6 circles. Top with remaining circles and press edges to seal. Crimp with a fork.
  7. Whisk egg and heavy cream together. Brush tops with egg wash.
  8. Preheat oven to 350°F (175°C). Bake on a parchment-lined baking sheet for 18–22 minutes until golden brown.
  9. Cool for at least 15 minutes. If desired, whisk glaze ingredients and drizzle over cooled pies before serving.
