  • 1/4 cup heavy cream
  • 1 teaspoon butter

Instructions

  1. Preheat the oven to 350°F (175°C) and line a 12-cup muffin tin with cupcake liners.
  2. In a bowl, combine almond flour, coconut flour, sugar-free sweetener, baking powder, and salt.
  3. In another bowl, whisk eggs, melted butter, vanilla extract, and almond milk.
  4. Mix the wet ingredients into the dry ingredients until a smooth batter forms.
  5. Divide the batter evenly among the cupcake liners, filling each about one-third full.
  6. In a separate bowl, beat cream cheese and powdered sweetener until smooth.
  7. Add the egg and vanilla extract and mix until creamy.
  8. Spoon the cheesecake mixture evenly over the cake batter in each liner.
  9. Bake for 18–22 minutes until the centers are set and edges are lightly golden.
  10. Allow cupcakes to cool completely.
  11. Heat the heavy cream until warm but not boiling and pour it over the chocolate chips.
  12. Let sit for 1 minute, then stir until smooth and mix in the butter.
  13. Spoon or drizzle the ganache over the cooled cupcakes and allow it to set before serving.
