Ingredients

  • 1/2 teaspoon almond extract
  • Pinch of salt

Optional Topping:

  • 2 tablespoons chopped pistachios for garnish

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch pan with parchment paper, leaving overhang for easy lifting.
  2. Combine almond flour, ground pistachios, sweetener, and salt. Add melted butter and vanilla, mixing until damp crumbs form.
  3. Press crust mixture firmly into pan. Bake 10–12 minutes until lightly golden. Cool slightly.
  4. Beat cream cheese until smooth. Add sweetener and mix well. Add eggs one at a time on low speed.
  5. Stir in sour cream, heavy cream, vanilla, almond extract, salt, and ground pistachios. Mix until smooth.
  6. Pour filling over cooled crust and spread evenly. Bake 30–35 minutes until center is just set and slightly jiggly.
  7. Cool at room temperature for 1 hour, then refrigerate at least 3 hours.
  8. Lift cheesecake from pan using parchment, slice into bars, and garnish with chopped pistachios if desired.
