Description

Soft and fluffy sugar-free rolls filled with a naturally sweet date and pistachio cream, offering a wholesome and nutty dessert with a creamy, melt-in-your-mouth texture.


Ingredients

  • 2 1/2 cups all-purpose flour
  • 1/4 cup coconut flour
  • 2 tsp active dry yeast
  • 1/4 cup warm water
  • 1/2 cup unsweetened almond milk
  • 1/4 cup unsalted butter, melted
  • 2 tbsp erythritol or preferred sugar substitute
  • 1/4 tsp salt
  • 2 large eggs
  • 1 cup pitted dates, chopped
  • 1/2 cup pistachios, finely chopped
  • 1/4 cup unsweetened cream cheese
  • 2 tbsp unsweetened Greek yogurt
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • Extra crushed pistachios (optional)

Instructions

  1. Dissolve yeast in warm water and let sit for 5 minutes until frothy.
  2. In a bowl, mix flours, erythritol, and salt. Add butter, almond milk, eggs, and yeast mixture. Mix into a soft dough.
  3. Knead for 5–7 minutes until smooth. Cover and let rise for 1 hour until doubled.
  4. Blend dates, pistachios, cream cheese, yogurt, vanilla, and cinnamon into a smooth filling.
  5. Roll dough into a rectangle and spread filling evenly.
  6. Roll into a log and cut into 8 pieces.
  7. Place in a greased baking dish and let rise for 20 minutes.
  8. Bake at 175°C (350°F) for 25–30 minutes until golden brown.
  9. Cool slightly, garnish with pistachios, and serve.
