Soft and fluffy sugar-free rolls filled with a naturally sweet date and pistachio cream, offering a wholesome and nutty dessert with a creamy, melt-in-your-mouth texture.
Ingredients
- 2 1/2 cups all-purpose flour
- 1/4 cup coconut flour
- 2 tsp active dry yeast
- 1/4 cup warm water
- 1/2 cup unsweetened almond milk
- 1/4 cup unsalted butter, melted
- 2 tbsp erythritol or preferred sugar substitute
- 1/4 tsp salt
- 2 large eggs
- 1 cup pitted dates, chopped
- 1/2 cup pistachios, finely chopped
- 1/4 cup unsweetened cream cheese
- 2 tbsp unsweetened Greek yogurt
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
- Extra crushed pistachios (optional)
Instructions
- Dissolve yeast in warm water and let sit for 5 minutes until frothy.
- In a bowl, mix flours, erythritol, and salt. Add butter, almond milk, eggs, and yeast mixture. Mix into a soft dough.
- Knead for 5–7 minutes until smooth. Cover and let rise for 1 hour until doubled.
- Blend dates, pistachios, cream cheese, yogurt, vanilla, and cinnamon into a smooth filling.
- Roll dough into a rectangle and spread filling evenly.
- Roll into a log and cut into 8 pieces.
- Place in a greased baking dish and let rise for 20 minutes.
- Bake at 175°C (350°F) for 25–30 minutes until golden brown.
- Cool slightly, garnish with pistachios, and serve.

- Ensure yeast is active for proper rise.
- Soften dates if needed for easier blending.
