Description

Ingredients

  • 1 1/2 cups almond flour
  • 1/4 cup coconut flour
  • 1/2 cup monk fruit sweetener
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1/3 cup melted butter
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • 4 ounces cream cheese, softened
  • 1/4 cup powdered monk fruit sweetener
  • 1 teaspoon vanilla extract
  • 3/4 cup finely chopped strawberries

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
  2. In a bowl, mix almond flour, coconut flour, monk fruit sweetener, baking powder, and salt.
  3. Add eggs, melted butter, and vanilla extract, mixing until a smooth dough forms.
  4. Press half the dough evenly into the baking dish and bake for 12–15 minutes until lightly golden. Cool completely.
  5. Repeat with the remaining dough to form the top layer and cool fully.
  6. Whip heavy cream until soft peaks form.
  7. In another bowl, beat cream cheese, powdered monk fruit sweetener, and vanilla until smooth.
  8. Fold whipped cream into the cream cheese mixture until light and fluffy, then gently fold in chopped strawberries.
  9. Spread the filling over the cooled bottom layer evenly.
  10. Place the top cookie layer over the filling and press gently.
  11. Refrigerate for at least 2 hours until set.
  12. Slice into bars and serve chilled.
