Ingredients
- 12 oz sugar-free white chocolate chips (about 2 cups)
- 1/4 cup unsalted butter
- 1/3 cup heavy cream
- 1/3 cup powdered sugar-free sweetener
- 1 teaspoon vanilla extract
- 1/2 cup unsweetened dried cranberries
- 1/4 cup pistachio butter or finely ground pistachios
- 1 pinch salt
Instructions
- Line an 8×8-inch pan with parchment paper and set aside.
- In a saucepan over low heat, melt the sugar-free white chocolate chips, butter, and heavy cream, stirring constantly until smooth.
- Remove from heat and stir in the powdered sweetener, vanilla extract, and salt until fully combined.
- Gently fold in the dried cranberries.
- Pour the mixture into the prepared pan and smooth the top evenly.
- Spoon small amounts of pistachio butter on top and swirl gently with a knife or toothpick.
- Refrigerate for about 2 hours, or until fully set.
- Slice into pieces and serve chilled or at room temperature.
