Description

A creamy, no-bake sugar-free white chocolate fudge studded with tart cranberries and finished with a festive pistachio swirl.


Ingredients

  • 12 oz sugar-free white chocolate chips (about 2 cups)
  • 1/4 cup unsalted butter
  • 1/3 cup heavy cream
  • 1/3 cup powdered sugar-free sweetener
  • 1 teaspoon vanilla extract
  • 1/2 cup unsweetened dried cranberries
  • 1/4 cup pistachio butter or finely ground pistachios
  • 1 pinch salt

Instructions

  1. Line an 8×8-inch pan with parchment paper and set aside.
  2. In a saucepan over low heat, melt the sugar-free white chocolate chips, butter, and heavy cream, stirring constantly until smooth.
  3. Remove from heat and stir in the powdered sweetener, vanilla extract, and salt until fully combined.
  4. Gently fold in the dried cranberries.
  5. Pour the mixture into the prepared pan and smooth the top evenly.
  6. Spoon small amounts of pistachio butter on top and swirl gently with a knife or toothpick.
  7. Refrigerate for about 2 hours, or until fully set.
  8. Slice into pieces and serve chilled or at room temperature.
