Ingredients
- 2 cups mashed fresh strawberries (about 1 lb)
- 2 tbsp freshly squeezed lemon juice
- 4 cups granulated sugar
- 3/4 cup water
- 1 box (1.75 oz) Sure-Jell fruit pectin
Instructions
- Hull and mash strawberries in a large bowl until juicy but still slightly chunky. Measure exactly 2 cups.
- Stir in lemon juice and gradually add sugar, mixing until dissolved. Let sit for 10 minutes, stirring occasionally.
- In a saucepan, combine water and pectin. Bring to a rolling boil, stirring constantly, and cook for exactly 1 minute.
- Pour the hot pectin mixture into the strawberry mixture. Stir for 3 minutes until smooth and fully combined.
- Spoon jam into clean 8-ounce freezer-safe jars, leaving 1/2 inch headspace. Let sit at room temperature for 24 hours to set.
- Label jars and store in the fridge or freezer.

- Frozen strawberries can be used if thawed and drained first.
