Ingredients
- 2 cups fresh or frozen blueberries (or mixed berries)
- 1/2 cup apple cider vinegar
- 1/4 cup water
- 1/3 cup granulated sugar
- 1 tablespoon honey
- 1/2 teaspoon salt
- 1/2 teaspoon crushed red pepper flakes
- 1/4 teaspoon ground black pepper
- 1/2 teaspoon mustard seeds
- 1/2 teaspoon whole cloves
- 1 small cinnamon stick
Instructions
- Rinse fresh berries or slightly thaw frozen berries.
- In a saucepan, combine vinegar, water, sugar, honey, and salt. Heat over medium and stir until dissolved.
- Add red pepper flakes, black pepper, mustard seeds, cloves, and cinnamon stick. Simmer for 5 minutes.
- Remove from heat and let brine cool for about 10 minutes.
- Place berries in a clean glass jar.
- Pour warm brine over berries, ensuring they are fully submerged.
- Let cool to room temperature, then cover and refrigerate.
- Marinate for at least 24 hours before serving.
