Description

A bold and tangy berry preserve made with juicy blueberries infused in a spiced vinegar brine, offering a unique balance of sweet, sour, and lightly spicy flavors.


Ingredients

  • 2 cups fresh or frozen blueberries (or mixed berries)
  • 1/2 cup apple cider vinegar
  • 1/4 cup water
  • 1/3 cup granulated sugar
  • 1 tablespoon honey
  • 1/2 teaspoon salt
  • 1/2 teaspoon crushed red pepper flakes
  • 1/4 teaspoon ground black pepper
  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon whole cloves
  • 1 small cinnamon stick

Instructions

  1. Rinse fresh berries or slightly thaw frozen berries.
  2. In a saucepan, combine vinegar, water, sugar, honey, and salt. Heat over medium and stir until dissolved.
  3. Add red pepper flakes, black pepper, mustard seeds, cloves, and cinnamon stick. Simmer for 5 minutes.
  4. Remove from heat and let brine cool for about 10 minutes.
  5. Place berries in a clean glass jar.
  6. Pour warm brine over berries, ensuring they are fully submerged.
  7. Let cool to room temperature, then cover and refrigerate.
  8. Marinate for at least 24 hours before serving.
