Ingredients
- 1 cup mashed sweet potatoes (about 1 large or 2 small sweet potatoes)
- 1 cup granulated sugar
- 1/2 cup vegetable oil
- 1/4 cup milk
- 2 large eggs
- 1 tsp vanilla extract
- 1 3/4 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/2 tsp salt
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
- In a large bowl, whisk together mashed sweet potatoes, sugar, oil, milk, eggs, and vanilla until smooth.
- In a separate bowl, mix flour, baking soda, cinnamon, nutmeg, and salt.
- Add dry ingredients to wet ingredients and stir until just combined.
- Pour batter into prepared loaf pan and smooth the top.
- Bake for 55–60 minutes, covering loosely with foil halfway to prevent over-browning. Check for doneness with a toothpick.
- Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
- Stir in 1/2 cup chopped nuts or chocolate chips for added flavor.
- Top with a powdered sugar glaze or cream cheese frosting.
- Use brown sugar for deeper flavor, or add orange zest for brightness.
