Ingredients
- ¾ pound 93% lean ground beef
- 1 tablespoon taco seasoning
- ½ cup yellow onion, chopped
- ½ cup red bell pepper, chopped
- ½ cup green bell pepper, chopped
- 10 ounces canned diced tomatoes with green chiles
- 1½ cups beef broth
- ½ cup milk
- 8 ounces macaroni or other small pasta
- 1 cup Mexican blend cheese or Monterey Jack cheese
Instructions
- In a large deep skillet, cook ground beef and taco seasoning over medium-high heat until browned.
- Add onion and bell peppers, and cook until slightly tender and fragrant.
- Stir in diced tomatoes and beef broth. Bring to a boil.
- Add pasta, ensuring it’s submerged in the liquid. Reduce heat to medium-low, cover, and cook until pasta is nearly tender, stirring halfway.
- Stir in milk and cook uncovered, stirring occasionally, until pasta is al dente and most of the liquid is absorbed.
- Remove from heat and stir in cheese until melted and creamy.
- Serve hot and enjoy.
