Ingredients

  • 3 ripe bananas (about 1½ cups mashed)
  • ⅓ cup coconut sugar
  • ¼ cup maple syrup
  • ¼ cup unsweetened non-dairy milk
  • 2 teaspoons vanilla extract
  • 1 teaspoon apple cider vinegar
  • 3 tablespoons melted refined coconut oil
  • 2 cups oat flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 2 teaspoons cinnamon
  • ½ teaspoon nutmeg
  • ½ teaspoon salt
  • ⅓ cup vegan chocolate chips (plus extra for topping)
  • ¼ cup chopped walnuts (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×5-inch loaf pan with parchment paper.
  2. In a large bowl, whisk together mashed bananas, coconut sugar, maple syrup, non-dairy milk, coconut oil, vanilla, and apple cider vinegar until smooth.
  3. Add oat flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Stir until just combined.
  4. Fold in chocolate chips and walnuts (if using).
  5. Pour batter into prepared loaf pan and sprinkle extra chocolate chips on top.
  6. Bake for 60–65 minutes, or until a toothpick inserted in the center comes out clean.
  7. Cool in the pan for 10–15 minutes, then transfer to a wire rack to cool completely before slicing.
